Special Celebration Cakes

I don’t normally do cakes per se as my focus has been on making muffin or cupcake size cakes for the school lunch box or for afternoon teas.  A slice of cake doesn’t seem to stay in one piece in a lunch box whereas a muffin or cupcake seems to take the knocks.

But I have been doing a little bit of gluten free baking for a friend who has a cafe and so I have gone in search of “cake” recipes that present well in a cafe cabinet.  I have actually enjoyed the challenge because I can bake a wider variety of recipes which might not otherwise be eaten at home.

Or these cake  can be your celebration cake for that special occasion such as a birthday or family gathering.

My KJ has requested a Raspberry White Chocolate Cake for his upcoming birthday… I told him that I’ll see what I can do…

1. Flourless Lime and Almond Cake with Caramelised Limes lime almond

2. Orange and Almond Cake

3. Coffee Hazelnut Cake

4. Raspberry and Cacao Nib Tea Cake from The Gluten Free Scallywag

5. Passionfruit Ricotta Flan with Lemon Cream

Passionfruit Flan

6. Mandarin and Almond Cake or Gluten Free Mandarin and Almond Cake

FREE “Gluten Free” Recipe Books

CSR Sugar promoted their gluten free icing sugars in the latest “The Australian Coeliac” magazine  as well as promoting  their Free Recipe Books.

Click on http://www.csrsugar.com.au to take up their offer.  “The Icing on the Cake” and ” Gluten Free Delights” are beautifully styled and  full of gluten free recipes.

For something different, try the Cheesecake Brownies recipe as a muffin rather than a slice.

I have spent a lot of money buying Gluten Free Cookbooks which tend to be more gourmet than practical and whose recipes require 5 extra pantry ingredients.

However  I feel that these CSR Sugar recipes  keep in mind that we all have busy lives and that we just need for  gluten free baking to be enjoyable and not too onerous.

Monte Carlos, Hummingbird Cake, Zesty Ricotta Cakes are but a few of the recipes on offer.

Once again, it is a reminder that you can access recipes through the websites for the gluten free products you use.

Inspiration is just but a click away.
