Red Velvet Cupcakes

Struggling with your gluten free diet because you feel you can no longer eat some of your favourite cakes?

Once you get more confident with gluten free baking, you might just find that a packet cake mix plus a bit of tweaking could just be the answer.

Cup Cakes

1 pkt Basco Golden Butter Cake Mix

2 eggs

3 tablespoons softened butter/margarine

2/3 cup buttermilk

1 teaspoon Vanilla extract

2 tablespoons cocoa, sifted

1 tablespoon red food colouring

Icing

125 g cream cheese

25 g unsalted butter, softened

60 g icing sugar mix

1 ½ teaspoons milk

Method

Cup Cakes

Place all ingredients in a large bowl and with an electric beater, mix on low until all ingredients are combined.

Beat for 2 minutes on medium speed.

Divide batter between cupcake papers.

Bake in a moderate oven 180 C (fan forced 160C) for 15 – 20 minutes until a skewer comes out clean. Allow to cool.

Icing

Place cream cheese and butter in a bowl and beat for 8 – 10 minutes with an electric mixer.  Add icing sugar and beat for a further 5 – 6 minutes until smooth.  Add the milk and beat until just combined. Top the cupcakes with the icing.

Lemon Cupcakes

In a rush and need to  cook up a batch of cakes quickly.  Then with a bit of thought, you can turn a cake packet mix into something a little different.

Cupcakes

1 pkt Basco Golden Butter Cake MixLemon Cupcakes

2 eggs

3 tablespoons softened butter/margarine

2/3 cup milk

1 teaspoon lemon zest

60 ml lemon curd (store bought)

Icing

4 tablespoons lemon curd

1 tablespoon lemon juice

50 g sugar

 

Method

Cupcakes

Place all ingredients in a large bowl and with an electric beater, mix on low until all ingredients are combined.

Beat for 2 minutes on medium speed.

Put 1 dessert spoon of mixture into bottom of cupcake papers. Top with 1 teaspoon lemon curd. Top with remaining cake batter.

Bake in a moderate oven 180 C (fan forced 160C) for 15 – 20 minutes until a skewer comes out clean.

 

Icing

Microwave the lemon curd and lemon juice on high for 1 minute until melted.

Brush tops of each cupcake with lemon curd syrup.

Sprinkle caster sugar over the top of cupcakes.

Gluten Free Raspberry Cupcakes

This is an example of how to turn a packet cake mix into something special.Raspberry Muffins

Thank you Sandra  for your friend’s recipe : Madame’s  GF  Raspberry Surprise Cupcakes.

Simply add a grated apple to the packet mix, layer batter, raspberries then batter into paper cases and then when cooled, added 2 tablespoons of sieved raspberries and tablespoon of softened butter to the icing mixture.

I couldn’t get to the supermarket quick enough to buy the Basco Vanilla Cup Cake Packet Mix.

I will definitely keep a packet in the pantry as a back up for when my son has a group of friends over.
