In a rush and need to cook up a batch of cakes quickly. Then with a bit of thought, you can turn a cake packet mix into something a little different.
3 tablespoons softened butter/margarine
2/3 cup milk
1 teaspoon lemon zest
60 ml lemon curd (store bought)
4 tablespoons lemon curd
1 tablespoon lemon juice
50 g sugar
Place all ingredients in a large bowl and with an electric beater, mix on low until all ingredients are combined.
Beat for 2 minutes on medium speed.
Put 1 dessert spoon of mixture into bottom of cupcake papers. Top with 1 teaspoon lemon curd. Top with remaining cake batter.
Bake in a moderate oven 180 C (fan forced 160C) for 15 – 20 minutes until a skewer comes out clean.
Microwave the lemon curd and lemon juice on high for 1 minute until melted.
Brush tops of each cupcake with lemon curd syrup.
Sprinkle caster sugar over the top of cupcakes.
